Cod tongues & Scrunchions

I had to show these cooking in the pan. When you poke/press on them with a spatula they're kinda springy and gelatinous - it's awesome. Eating any kind of tongue is more about the texture, but cod tongues are also quite scrumptious.

Super scrumptious with a giant dose of pan-fried scrunchions poured over top! Scrunchions are bits of pork back fat. So basically this is a big plate of fried tongue covered with fried pork fat... and we ate this as an appetizer.
